Description

Creamy Cilantro Lime Chicken is a flavorful, easy-to-make dish that combines tender chicken breasts with a luscious, creamy sauce infused with fresh cilantro and tangy lime.


Ingredients

4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)

1 cup fresh cilantro, chopped

1/4 cup lime juice (about 23 limes)

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

2 tablespoons olive oil

Salt and pepper to taste


Instructions

  1. Pat the chicken breasts dry with a paper towel and season with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear them for 6-7 minutes on each side until they are golden brown and cooked through.
  3. Remove the chicken from the skillet and set it aside. In the same skillet, sauté the minced garlic for 30 seconds until fragrant.
  4. Add the chicken broth and lime juice to the skillet, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream and chopped cilantro, letting the sauce simmer for about 5 minutes until it slightly thickens.
  6. Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for an additional 2-3 minutes.
  7. Plate the chicken breasts, drizzle with the creamy sauce, and garnish with fresh cilantro before serving.

Notes

This dish pairs well with rice, quinoa, roasted vegetables, or a fresh salad.

If you prefer a lighter version, swap the heavy cream with half-and-half.

For a dairy-free version, replace the heavy cream with coconut cream.

To make the sauce thicker, simmer it for a few extra minutes or add cornstarch mixed with water.
