Creamy Fettuccine with Chicken Bites

Description

A quick and comforting pasta dish featuring tender spiced chicken bites served over silky fettuccine coated in a rich garlic-Parmesan cream sauce.


Ingredients

  • Pasta:
  • 300 g dried fettuccine
  • Chicken Bites:
  • 600 g chicken breast
  • 1 Tbsp plain flour
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 Tbsp oil
  • 1/4 cup grated Parmesan (25 g)
  • Creamy Garlic Sauce:
  • 1 Tbsp butter
  • 5 cloves garlic, crushed
  • 1 chicken stock cube
  • 1/2 cup boiling water
  • 1/2 cup cream
  • 1/2 cup grated Parmesan (50 g)
  • Juice of 1/2 lemon
  • 1 handful fresh parsley, chopped

Instructions

  1. Cook fettuccine in salted boiling water according to package instructions. Drain and set aside.
  2. Cut chicken into bite-size pieces. Toss with flour, cumin, paprika, salt, and pepper.
  3. Heat oil in a nonstick pan over medium-high heat. Cook chicken for 5–10 minutes until browned and cooked through.
  4. Sprinkle 1/4 cup Parmesan over the chicken, toss, and cook 2 minutes more. Remove chicken from pan.
  5. In the same pan, melt butter over medium heat. Add garlic and cook for 1 minute.
  6. Dissolve stock cube in boiling water and pour into the pan, scraping up browned bits.
  7. When bubbling, add cream and stir. Simmer until slightly thickened.
  8. Add cooked fettuccine and toss to coat. Stir in Parmesan, parsley, and lemon juice. Season to taste.
  9. Divide pasta into bowls and top with chicken bites. Garnish with extra parsley.

  • Add spinach or peas for extra vegetables.
  • Use chicken thighs for more tenderness.
  • Add chili flakes for a spicy twist.
  • Use linguine or penne if preferred.
