Description

Creamy Jamaican Shrimp Rasta Pasta combines jerk seasoning, creamy sauce, and tender shrimp over fettuccine pasta for a flavorful, indulgent meal with a spicy Caribbean kick.


Ingredients

8 ounces fettuccine pasta

1 pound shrimp, peeled and deveined

2 tablespoons jerk seasoning

1 tablespoon olive oil

1 bell pepper (red, green, or yellow), sliced

1 small onion, sliced

2 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

Salt and pepper to taste

Fresh parsley, chopped for garnish

Grated Parmesan cheese (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
  2. In a medium bowl, toss the shrimp with jerk seasoning until evenly coated.
  3. In a large skillet, heat olive oil over medium heat. Add the sliced bell pepper and onion. Sauté for about 4-5 minutes, or until soft.
  4. Stir in minced garlic and cook for another minute until fragrant.
  5. Add the seasoned shrimp to the skillet and cook for 3-4 minutes, or until the shrimp turn pink and opaque. Remove shrimp and vegetables from the skillet and set aside.
  6. In the same skillet, add the heavy cream and chicken broth. Stir to combine and bring it to a simmer. Let the sauce cook for 2-3 minutes to thicken slightly.
  7. Return the cooked fettuccine, shrimp, and vegetables to the skillet. Toss everything together to coat the pasta and shrimp with the creamy sauce.
  8. Adjust seasoning with salt and pepper to taste.
  9. Garnish with chopped parsley and optional Parmesan cheese before serving.

Notes

For a spicier dish, add more jerk seasoning or a pinch of cayenne pepper to the sauce.

For a dairy-free version, substitute coconut milk for heavy cream.

You can add other vegetables like spinach, kale, or cherry tomatoes for more flavor and texture.
