Description
Creamy Jamaican Shrimp Rasta Pasta combines jerk seasoning, creamy sauce, and tender shrimp over fettuccine pasta for a flavorful, indulgent meal with a spicy Caribbean kick.
Ingredients
8 ounces fettuccine pasta
1 pound shrimp, peeled and deveined
2 tablespoons jerk seasoning
1 tablespoon olive oil
1 bell pepper (red, green, or yellow), sliced
1 small onion, sliced
2 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
Salt and pepper to taste
Fresh parsley, chopped for garnish
Grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
- In a medium bowl, toss the shrimp with jerk seasoning until evenly coated.
- In a large skillet, heat olive oil over medium heat. Add the sliced bell pepper and onion. Sauté for about 4-5 minutes, or until soft.
- Stir in minced garlic and cook for another minute until fragrant.
- Add the seasoned shrimp to the skillet and cook for 3-4 minutes, or until the shrimp turn pink and opaque. Remove shrimp and vegetables from the skillet and set aside.
- In the same skillet, add the heavy cream and chicken broth. Stir to combine and bring it to a simmer. Let the sauce cook for 2-3 minutes to thicken slightly.
- Return the cooked fettuccine, shrimp, and vegetables to the skillet. Toss everything together to coat the pasta and shrimp with the creamy sauce.
- Adjust seasoning with salt and pepper to taste.
- Garnish with chopped parsley and optional Parmesan cheese before serving.
Notes
For a spicier dish, add more jerk seasoning or a pinch of cayenne pepper to the sauce.
For a dairy-free version, substitute coconut milk for heavy cream.
You can add other vegetables like spinach, kale, or cherry tomatoes for more flavor and texture.
