Ingredients

1 pound baby red potatoes

1 cup frozen peas (or fresh)

1 cup milk

Instructions

  1. Prepare the Potatoes: Wash and cut the baby red potatoes into bite-sized pieces. Boil them in a pot of water until fork-tender, about 5–8 minutes. Drain and set aside.
  2. Make the Sauce Base: In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1 minute, whisking constantly to avoid lumps.
  3. Build the Cream Sauce: Slowly whisk in the milk until smooth. Cook until slightly thickened, then stir in the chicken bouillon. Season with salt and pepper to taste.
  4. Finish the Sauce: Stir in the heavy cream and cook until the sauce reaches a gravy-like consistency. Adjust seasoning if needed.
  5. Combine and Serve: Gently fold the boiled potatoes and peas into the creamy sauce, making sure they are evenly coated. Serve warm.

Notes

For a vegetarian version, use vegetable bouillon instead of chicken bouillon.

Substitute Yukon Gold potatoes for a creamier texture.

Add minced garlic to the butter for extra flavor.

Sprinkle fresh herbs like thyme or parsley for a burst of freshness.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of milk to loosen the sauce if it thickens.
