Description

Creamy Steak Fettuccine is a rich and indulgent pasta dish featuring tender steak, a luscious Parmesan cream sauce, and fresh vegetables. This quick 30-minute meal is perfect for date nights or when you’re craving a comforting yet elegant dinner.


Ingredients

  • For the Pasta & Steak:

    • Kosher salt
    • 12 oz fettuccine
    • 1 lb sirloin steak
    • 2 tbsp vegetable oil
    • Freshly ground black pepper
  • For the Sauce:

    • 2 tbsp butter
    • 2 cloves garlic, minced
    • 2 tbsp all-purpose flour
    • 2 cups milk
    • ½ cup freshly grated Parmesan
    • 1 tbsp freshly chopped parsley
  • For the Vegetables & Garnish:

    • 1 ½ cups halved cherry tomatoes
    • 4 cups baby spinach
    • 2 tbsp balsamic glaze (or ⅓ cup balsamic vinegar simmered for about 10 minutes)

Instructions

  • Cook the Pasta:

    • Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente.
    • Reserve ½ cup of pasta water before draining. Return the pasta to the pot.
  • Cook the Steak:

    • Coat both sides of the steak with oil and season generously with salt and pepper.
    • Heat a large skillet over medium-high heat and cook the steak for about 4 minutes per side for medium-rare.
    • Let it rest for 10 minutes, then thinly slice.
  • Prepare the Sauce:

    • In the same skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
    • Whisk in flour and cook for another minute. Slowly add milk while whisking to avoid lumps.
    • Simmer until thickened, about 5 minutes. Stir in Parmesan and parsley, then season with salt and pepper to taste.
  • Add Tomatoes and Spinach:

    • Add cherry tomatoes and cook for 2-3 minutes until they begin to soften. Stir in the spinach and cook until wilted.
  • Combine Everything:

    • Add the cooked pasta and ¼ cup reserved pasta water to the skillet. Toss to combine, adding more pasta water if needed.
  • Serve:

    • Top with sliced steak and drizzle with balsamic glaze. Serve hot.
