- 12 oz fettuccine
- 1 lb sirloin steak
- 2 tbsp vegetable oil

- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups milk
- ½ cup freshly grated Parmesan
- 1 tbsp freshly chopped parsley

- 1 ½ cups halved cherry tomatoes
- 4 cups baby spinach
- 2 tbsp balsamic glaze (or ⅓ cup balsamic vinegar simmered for about 10 minutes)
Instructions

Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente.
- Reserve ½ cup of pasta water before draining. Return the pasta to the pot.

Cook the Steak:
- Coat both sides of the steak with oil and season generously with salt and pepper.
- Heat a large skillet over medium-high heat and cook the steak for about 4 minutes per side for medium-rare.
- Let it rest for 10 minutes, then thinly slice.

- In the same skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
- Whisk in flour and cook for another minute. Slowly add milk while whisking to avoid lumps.
- Simmer until thickened, about 5 minutes. Stir in Parmesan and parsley, then season with salt and pepper to taste.

- Add cherry tomatoes and cook for 2-3 minutes until they begin to soften. Stir in the spinach and cook until wilted.

- Add the cooked pasta and ¼ cup reserved pasta water to the skillet. Toss to combine, adding more pasta water if needed.
