Description

This Creamy White Chili is a delicious and comforting variation of the classic chili, featuring white beans, chicken, and a rich, velvety broth. Ingredients

  • 1 tablespoon olive oil
  • 1 pound skinless, boneless chicken breast, cubed
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (4-ounce) can diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 (15-ounce) can white beans (such as cannellini or great northern)
  • 1 (15-ounce) can chicken broth
  • 1 cup half-and-half or heavy cream
  • ½ cup sour cream
  • Salt and pepper, to taste

Instructions

1️⃣ Cook the Chicken

  • Heat olive oil in a large pot over medium heat.
  • Add cubed chicken and cook until browned, about 5-7 minutes.
  • Remove chicken and set aside.

2️⃣ Sauté the Vegetables

  • In the same pot, sauté onionbell pepper, and garlic until softened, about 3-4 minutes.

3️⃣ Add Seasonings and Chilies

  • Stir in diced green chiliescuminoregano, salt, and pepper.

4️⃣ Add the Broth and Beans

  • Add white beanschicken broth, and half-and-half (or heavy cream) to the pot.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.

5️⃣ Stir in Chicken and Sour Cream

  • Add the cooked chicken and sour cream to the pot.
  • Let simmer for another 5-10 minutes, then serve hot.
