Description
Crispy keto-friendly blueberry cream cheese roll-ups made with low-carb tortillas, perfect for a sweet, healthy treat.
Ingredients
- 6 small zero-carb keto tortillas
- 1/3 cup fresh blueberries
- 6 ounces cream cheese
- 2 tbsp plain Greek yogurt
- 1 tsp vanilla extract
- 2 tbsp butter, melted
- 3 tbsp Swerve confectioner’s sugar substitute, plus more for dusting
Instructions
- Preheat air fryer to 375°F (190°C).
- In a mixing bowl, blend cream cheese, Greek yogurt, vanilla extract, and Swerve until smooth and creamy.
- Spread a generous layer of the cream cheese mixture down the center of each tortilla.
- Top the filling with a few fresh blueberries.
- Roll each tortilla tightly around the filling and place seam-side down on a greased air fryer tray or basket.
- Brush the tops of the roll-ups with melted butter.
- Air fry for 8–10 minutes, or until the tortillas are golden brown and crispy.
- Remove from air fryer, dust with additional Swerve if desired, and serve warm.
Notes
- Ensure tortillas are tightly rolled to prevent filling from leaking.
- Feel free to substitute blueberries with other low-carb berries like raspberries or strawberries if desired.
- Adjust the sweetness level by adding more or less Swerve according to taste.
