Description

Crispy keto-friendly blueberry cream cheese roll-ups made with low-carb tortillas, perfect for a sweet, healthy treat.


Ingredients

  • 6 small zero-carb keto tortillas
  • 1/3 cup fresh blueberries
  • 6 ounces cream cheese
  • 2 tbsp plain Greek yogurt
  • 1 tsp vanilla extract
  • 2 tbsp butter, melted
  • 3 tbsp Swerve confectioner’s sugar substitute, plus more for dusting

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a mixing bowl, blend cream cheese, Greek yogurt, vanilla extract, and Swerve until smooth and creamy.
  3. Spread a generous layer of the cream cheese mixture down the center of each tortilla.
  4. Top the filling with a few fresh blueberries.
  5. Roll each tortilla tightly around the filling and place seam-side down on a greased air fryer tray or basket.
  6. Brush the tops of the roll-ups with melted butter.
  7. Air fry for 8–10 minutes, or until the tortillas are golden brown and crispy.
  8. Remove from air fryer, dust with additional Swerve if desired, and serve warm.

Notes

  • Ensure tortillas are tightly rolled to prevent filling from leaking.
  • Feel free to substitute blueberries with other low-carb berries like raspberries or strawberries if desired.
  • Adjust the sweetness level by adding more or less Swerve according to taste.
