These crispy zucchini garlic bites are a savory, cheesy snack made with grated zucchini, Parmesan, and herbs. Baked to golden perfection, they’re crunchy on the outside, tender inside, and perfect for dipping in marinara or ranch.
Ingredients
2 medium zucchinis, grated and moisture squeezed out
1 cup breadcrumbs (plain or seasoned)
½ cup grated Parmesan cheese
2 large eggs
2 cloves garlic, minced
¼ cup finely chopped onion
2 tbsp chopped fresh parsley (or 1 tsp dried parsley)
½ tsp salt
¼ tsp black pepper
½ tsp Italian seasoning (optional)
Cooking spray or olive oil, for baking
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or olive oil.
- Grate zucchinis and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- In a large bowl, combine zucchini, breadcrumbs, Parmesan, eggs, garlic, onion, parsley, salt, pepper, and Italian seasoning. Mix until well combined.
- Shape mixture into small balls (about 1–1½ inches) and place evenly on the prepared baking sheet.
- Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
- Cool slightly and serve warm with marinara, ranch, or your favorite dipping sauce.
