Ingredients
- 2 lbs boneless, skinless chicken breasts (about 3–4 breasts)
- 1 oz packet ranch seasoning mix
- 16 oz cream cheese, cubed
- 2 cups shredded cheddar cheese
Instructions
- Prep the Chicken: Spray the bottom of your slow cooker with non-stick spray. Place the chicken breasts inside and sprinkle with the ranch seasoning mix. Top with cubes of cream cheese.
- Slow Cook: Cover and cook on LOW for 5½ hours (or 3 hours on HIGH).
- Shred the Chicken: Once cooked, shred the chicken with two forks right in the slow cooker. Mix it well into the softened cream cheese.
- Add Cheese: Stir in the shredded cheddar cheese. Let it melt and combine with the chicken for about 10 minutes.
- Serve: Serve as is, or enjoy over rice, on buns, in lettuce wraps, or with mashed potatoes. Garnish with extra green onions for an extra touch.
Notes
- Low-Carb Option: Serve over cauliflower rice or in lettuce wraps to keep it low-carb.
- Extra Flavor: Add green onions, jalapeños, or hot sauce for a flavor boost.
- Spicy Version: Stir in sriracha or chili flakes for a spicy kick.
