Crockpot Mountain Man Breakfast is a hearty all-in-one breakfast casserole made with sausage, veggies, hash browns, eggs, and cheese. Slow-cooked to perfection, it’s ideal for holidays, weekends, or feeding a crowd with minimal effort.
Ingredients
1 lb breakfast sausage, crumbled
1 medium onion, diced
1 bell pepper, diced (red or green)
4 cups frozen hash browns
8 large eggs
1 cup shredded cheddar cheese
1/2 cup milk
1 tsp garlic powder
1 tsp smoked paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Cook crumbled sausage in a skillet until browned, then transfer to the crockpot.
- In the same skillet, sauté onion and bell pepper for 3–4 minutes until softened. Add to the crockpot.
- Spread frozen hash browns evenly over sausage and veggies.
- In a bowl, whisk eggs, milk, garlic powder, smoked paprika, salt, and pepper. Pour over hash browns.
- Sprinkle cheddar cheese on top, cover, and cook on low for 7–8 hours or high for 3–4 hours until eggs are set.
- Gently stir, garnish with parsley, and serve warm.
