Ingredients
3 small avocados
5 small cucumbers
12 oz grape or cherry tomatoes
1/2 bunch cilantro (about 1/4 cup)
2 tbsp lemon juice
2 tbsp extra virgin olive oil
1 tsp sea salt
1/2 tsp black pepper
Instructions
- Wash and cut the avocados, cucumbers, and tomatoes into bite-sized pieces. Place in a medium bowl.
- Finely chop the cilantro and add it to the bowl.
- Drizzle with lemon juice and olive oil, then season with salt and pepper.
- Toss gently to combine and serve immediately.
