Description

This hearty Stuffed Pepper Soup transforms the classic stuffed pepper into a cozy, one-pot comfort meal. Made with ground meat, bell peppers, rice, tomatoes, and savory herbs, it’s flavorful, filling, and perfect for family dinners or meal prep.


Ingredients

1 lb ground beef, turkey, or chicken

1 medium onion, chopped

1 bell pepper, chopped (red, green, or mixed)

2 cloves garlic, minced

1 cup uncooked rice (white or brown)

1 can (14.5 oz) diced tomatoes, with juices

1 can (15 oz) tomato sauce

4 cups beef broth or chicken broth

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt, or to taste

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

1/2 cup shredded cheese (cheddar or mozzarella, optional garnish)

Sour cream (optional garnish)

Chopped fresh parsley (optional garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground meat and cook until browned, breaking it into crumbles. Drain excess fat if needed.
  2. Add chopped onion, bell pepper, and garlic. Sauté for 3–4 minutes until softened and fragrant.
  3. Stir in diced tomatoes, tomato sauce, and broth. Add oregano, basil, salt, black pepper, and red pepper flakes if using. Bring to a gentle simmer.
  4. Add uncooked rice, stir, and cover. Simmer for 20–25 minutes, stirring occasionally, until rice is tender and flavors are well combined.
  5. Taste and adjust seasoning as needed.
  6. Ladle into bowls and top with shredded cheese, sour cream, and parsley if desired. Serve hot.

Notes

Use cooked rice if preferred—stir it in at the end to prevent overcooking.

Swap beef with turkey, chicken, or sausage for variation.

Make it low-carb by using cauliflower rice.
