Ingredients
4 chicken thighs, bone-in and skin-on
3 tablespoons Dijon mustard
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
1 tablespoon honey
Salt and black pepper, to taste
Fresh parsley for garnish (optional)
Instructions
- Pat the chicken thighs dry with paper towels. Season with salt and black pepper.
- In a bowl, whisk together Dijon mustard, olive oil, minced garlic, thyme, and honey until well combined.
- Coat the chicken thighs in the marinade. Cover and refrigerate for at least 30 minutes (or up to overnight for best results).
- Preheat the oven to 400°F (200°C).
- Place marinated chicken thighs in a baking dish, skin side up, and pour any remaining marinade over them.
- Bake for 30-35 minutes or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
- Remove from the oven and let the chicken rest for about 5 minutes.
- Garnish with fresh parsley if desired, and serve warm.
Notes
Add cayenne pepper or red pepper flakes for a spicy kick.
Experiment with other herbs like rosemary or oregano in place of thyme.
Grill the marinated chicken thighs for a smoky flavor instead of baking.
Use maple syrup or agave nectar as a honey substitute if preferred.
