Description

Ingredients

4 chicken thighs, bone-in and skin-on

3 tablespoons Dijon mustard

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon honey

Salt and black pepper, to taste

Fresh parsley for garnish (optional)


Instructions

  1. Pat the chicken thighs dry with paper towels. Season with salt and black pepper.
  2. In a bowl, whisk together Dijon mustard, olive oil, minced garlic, thyme, and honey until well combined.
  3. Coat the chicken thighs in the marinade. Cover and refrigerate for at least 30 minutes (or up to overnight for best results).
  4. Preheat the oven to 400°F (200°C).
  5. Place marinated chicken thighs in a baking dish, skin side up, and pour any remaining marinade over them.
  6. Bake for 30-35 minutes or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  7. Remove from the oven and let the chicken rest for about 5 minutes.

Notes
