Description

Dill Pickle Focaccia Bread combines soft, golden focaccia with creamy garlic-dill sauce, tangy pickles, and melted mozzarella cheese for a unique and flavorful twist on a classic recipe.


Ingredients

1 cup warm water (105°F–115°F)

1 teaspoon active dry yeast

2 tablespoons granulated sugar

⅓ cup extra virgin olive oil – divided

1 teaspoon Italian seasoning

2 teaspoons minced garlic

1 teaspoon kosher salt

2½ cups all-purpose flour

¾ cup sour cream

¼ cup mayonnaise

2 tablespoons whole milk

1 teaspoon lemon juice

1 teaspoon minced garlic

½ teaspoon dried dill weed (or 1½ teaspoons fresh dill)

½ teaspoon kosher salt

¼ teaspoon ground black pepper

2530 dill pickle slices

2 cups shredded mozzarella cheese

Fresh dill, chopped (for garnish)

Optional: Grated Parmesan for extra flavor


Instructions

  1. Make the focaccia dough: In a large bowl, mix the warm water, yeast, and sugar. Let it sit for 5 minutes until foamy. Add half of the olive oil mixture, then stir in the flour until combined. Knead for 5-7 minutes until smooth. Let the dough rise for 1 hour.
  2. Prepare the sauce: Whisk together sour cream, mayonnaise, milk, lemon juice, garlic, dill, salt, and pepper. Store in the fridge until needed.
  3. Assemble the bread: Preheat the oven to 450°F (230°C). Grease a 12-inch cast iron skillet or a 9×13-inch baking dish with the remaining olive oil mixture. Press the risen dough into the pan. Dimple the surface, then spread the creamy garlic-dill sauce over the dough. Top with dill pickle slices and shredded mozzarella.
  4. Bake: Bake for 22–25 minutes or until the crust is golden and the cheese is bubbly.
  5. Cool and garnish: Allow the focaccia to cool slightly, then garnish with freshly chopped dill and serve.

Notes

For a spicier kick, add red pepper flakes or drizzle hot sauce before baking.

Use provolone or gouda cheese for a different flavor if mozzarella isn’t available.

For a vegan version, substitute with dairy-free mozzarella and vegan mayonnaise.
