Ingredients

10 cups chicken broth (or beef/vegetable broth)

½1 cup cooked chicken (optional)

3 potatoes, peeled and cut into small pieces

¼ cup pearled barley

1 tablespoon butter or oil

1 onion, finely chopped

1 carrot, grated

1 cup grated dill pickles (or finely chopped)

Salt and pepper to taste

Fresh dill, for garnish

Sour cream, for serving (optional)


Instructions

  • Prepare the Broth: Bring the chicken broth to a boil. Add the potatoes and barley, then reduce the heat to a simmer.

  • Sauté Vegetables: In a separate pan, sauté the onion and grated carrot in butter or oil until tender, about 5 minutes. Season with salt and pepper.

  • Combine: Add the sautéed vegetables to the simmering broth along with the grated pickles and some pickle brine if desired.

  • Simmer: Continue simmering, covered but slightly open, for about 40 minutes until the barley and potatoes are tender.

  • Add Meat: If using cooked chicken, add it at the end of the cooking process.

  • Garnish: Serve the soup with fresh dill and a dollop of sour cream, if desired.

Notes

For a richer flavor, use beef or vegetable broth instead of chicken.

Adjust the pickle brine to your taste; it adds more tang if you prefer a stronger pickle flavor.

Add sour cream for extra creaminess and richness.

The soup can be made ahead and stored in the fridge for 2-3 days.
