Ingredients
For the Casserole:
- 14 oz “party size” bag of Nacho Cheese Doritos
- 1½–2 lbs ground beef
- 1 can (10¾ oz) cheddar cheese soup
- 1 can (10¾ oz) cream of chicken soup
- 1 can (12 oz) evaporated milk
- 1 can (4 oz) diced green chilies
- 2–3 cups shredded Mexican cheese
- 1 packet taco seasoning (optional)
For Toppings:
- Sour cream
- Diced green onions
- Sliced cherry tomatoes
- Sliced avocado or guacamole
- Salsa
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cook the Ground Beef: In a large pan, brown the ground beef and drain the fat. If using taco seasoning, add it to the beef and cook according to the package directions.
- Make the Sauce: Add the cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies to the beef. Stir until the mixture is bubbly and well combined.
- Layer the Casserole: In a baking dish, spray with non-stick spray. Add half of the Doritos, lightly crushing them. Layer with half of the beef mixture and top with 1 cup of shredded Mexican cheese.
- Repeat the Layers: Add the remaining Doritos, beef mixture, and cheese on top.
- Bake: Bake for 20 minutes, or until the cheese is melted and everything is heated through.
- Serve: Top with your choice of sour cream, diced green onions, sliced tomatoes, avocado, or salsa.
