Easy Almond Croissants

Description

Flaky croissants filled with a rich almond cream and topped with sliced almonds, then baked until golden for an easy bakery-style pastry ready in just 20 minutes.


Ingredients

1 cup almond meal

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract

6 croissants

1/2 cup sliced almonds

1 tablespoon powdered sugar, for dusting


Instructions

  1. Preheat oven to 350°F (180°C) and line 2 baking sheets with parchment paper.
  2. In a mixing bowl, beat almond meal, softened butter, granulated sugar, egg, vanilla extract, and almond extract until smooth and creamy.
  3. Slice each croissant in half using a serrated knife.
  4. Spread about 1 tablespoon of almond filling on the bottom half of each croissant and replace the top.
  5. Spread another tablespoon of almond filling over the top of each croissant.
  6. Press sliced almonds gently into the almond filling on top.
  7. Place croissants on prepared baking sheets and bake for 10–12 minutes, until lightly golden.
  8. Dust with powdered sugar and serve warm.

Notes

Almond flour can be substituted for almond meal.

Add a thin layer of raspberry jam inside for extra flavor.

Tent loosely with foil if almonds brown too quickly.

Reheat in a 300°F oven for 5–7 minutes to restore crispness.
