Description

Easy and crispy air fryer zucchini fries served with a flavorful garlic aioli dipping sauce, perfect for a healthy and tasty snack or side dish.


Ingredients

  • 2 medium zucchini
  • ⅓ cup all-purpose flour
  • 1 tablespoon Italian seasoning
  • 1 teaspoon kosher salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 2 large eggs
  • ½ cup plain bread crumbs
  • ½ cup Panko bread crumbs
  • ⅓ cup grated Parmesan cheese
  • Cooking oil spray, for cooking
  • For Garlic Aioli:
  • 45 cloves garlic, minced
  • 12 tablespoons fresh lemon or lime juice
  • ½ teaspoon Dijon mustard
  • ⅔ cup mayonnaise
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Slice zucchini into 3-inch long, ½-inch thick fries.
  2. In one shallow bowl, whisk together flour, Italian seasoning, salt, and pepper. In a second bowl, lightly whisk eggs. In a third bowl, combine bread crumbs and Parmesan cheese.
  3. Dredge each zucchini fry in the flour mixture, then dip in the egg (letting excess drip off), and finally coat thoroughly in the breadcrumb mixture. Place coated fries on a plate.
  4. Spray the air fryer basket with cooking spray and preheat to 400°F (200°C).
  5. Place zucchini fries in a single layer in the air fryer basket, working in batches if necessary. Lightly spray the tops of the fries with cooking spray.
  6. Air fry for 8-10 minutes, flipping once halfway through, until golden brown and crispy. Season hot fries with kosher salt.
  7. To prepare the garlic aioli, combine minced garlic, lemon or lime juice, and Dijon mustard in a small bowl and let sit for 10-15 minutes. Then whisk in the mayonnaise until smooth. Season with salt and pepper to taste.
  8. Serve zucchini fries hot with garlic aioli on the side.
