This Easy Beef & Broccoli Soba Bowl is a quick, healthy, and satisfying weeknight dinner. Tender beef, fresh or frozen broccoli, and soba noodles are tossed in a savory sauce that balances sweet, salty, and spicy flavors. Ingredients
8 oz. soba noodles (or any noodles of choice)
3 cups fresh or frozen broccoli florets
1 tbsp olive oil
8 oz. steak, sliced
4 garlic cloves, minced
1 cup chopped bell peppers
Green onion for garnishing
For the Sauce:
⅓ cup soy sauce (or tamari)
1 ½ tbsp honey
2 tsp sesame oil
3 tbsp olive oil
1 tbsp rice wine vinegar
1 tsp grated fresh ginger (or ½ tsp ginger powder)
1 tsp sriracha (or more to taste)
Instructions
- 
Cook the Noodles: - 
Cook the soba noodles according to the package instructions. Add the broccoli florets during the last 5 minutes of boiling. Drain both the noodles and broccoli.

Prepare the Sauce: - 
In a small bowl, whisk together the soy sauce (or tamari), honey, sesame oil, olive oil, rice wine vinegar, ginger, and sriracha. Set aside.

Cook the Beef: - 
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced steak and cook until browned. Add the minced garlic and cook for another minute.

Add Vegetables: - 
Add the broccoli and chopped bell peppers to the skillet, cooking for an additional 5 minutes.

Combine Everything: - 
Add the cooked noodles to the skillet and pour the prepared sauce over the ingredients. Toss everything together and stir-fry for about 3 minutes to combine.
