Instructions
-
Prepare the Beef:
-
Let the beef tenderloin come to room temperature for 1 hour. Remove any silver skin or excess fat and tie the roast using kitchen string for even cooking.
-
-
Season the Beef:
-
Preheat the oven to 450°F (230°C). Season the beef generously with salt and pepper. Heat olive oil in a pan over medium-high heat and sear the beef on all sides until browned, about 2-3 minutes per side.
-
-
Make the Garlic Herb Butter:
-
In a small bowl, mix together the softened butter, garlic, rosemary, thyme, oregano, and black pepper.
-
-
Roast the Beef:
-
Rub the garlic herb butter all over the beef tenderloin. Place the beef on a roasting pan and roast for 25-30 minutes, or until the internal temperature reaches 135°F for medium-rare.
-
-
Prepare the Horseradish Sauce:
-
In a bowl, mix together sour cream, mayonnaise, horseradish, chives, and salt. Adjust seasoning as needed.
-
-
Rest and Serve:
-
Once cooked, remove the beef from the oven and let it rest for 10 minutes before slicing. Serve with the creamy horseradish sauce.
