Ingredients

For the Beef Tenderloin:

23 pounds beef tenderloin roast, trimmed and tied

Kosher salt and freshly ground black pepper

2 tablespoons olive oil

For the Garlic Herb Butter:

1/2 cup salted butter, room temperature

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon dried oregano

Freshly ground black pepper

For the Horseradish Sauce:

1/2 cup sour cream

1/4 cup mayonnaise

2 tablespoons horseradish

2 tablespoons chives, chopped

Kosher salt, to taste


Instructions

  1. Prepare the Beef:

    • Let the beef tenderloin come to room temperature for 1 hour. Remove any silver skin or excess fat and tie the roast using kitchen string for even cooking.

  2. Season the Beef:

    • Preheat the oven to 450°F (230°C). Season the beef generously with salt and pepper. Heat olive oil in a pan over medium-high heat and sear the beef on all sides until browned, about 2-3 minutes per side.

  3. Make the Garlic Herb Butter:

    • In a small bowl, mix together the softened butter, garlic, rosemary, thyme, oregano, and black pepper.

  4. Roast the Beef:

    • Rub the garlic herb butter all over the beef tenderloin. Place the beef on a roasting pan and roast for 25-30 minutes, or until the internal temperature reaches 135°F for medium-rare.

  5. Prepare the Horseradish Sauce:

    • In a bowl, mix together sour cream, mayonnaise, horseradish, chives, and salt. Adjust seasoning as needed.

  6. Rest and Serve:

    • Once cooked, remove the beef from the oven and let it rest for 10 minutes before slicing. Serve with the creamy horseradish sauce.
