Description

Easy Chicken Yakisoba is a quick and flavorful stir-fry dish made with tender chicken thighs, crispy vegetables, and yakisoba noodles. This 20-minute meal is a perfect weeknight dinner that brings the taste of street food right to your kitchen, with a delicious balance of savory, sweet, and crispy flavors.

Ingredients

Yakisoba noodles

2 boneless, skinless chicken thighs

1 cup green cabbage, thinly sliced

1 onion, thinly sliced

1 carrot, thinly sliced

1/4 cup yakisoba sauce (store-bought or homemade)

Salt and ground black pepper, to taste

2 tbsp neutral oil (for stir-frying)

Instructions

  1. Prep the Ingredients: Slice the cabbage, onion, and carrot into thin strips. Slice the chicken thighs into even pieces. Fluff the yakisoba noodles by hand to separate them.

  2. Stir-Fry Chicken and Onions: Heat oil in a pan over medium heat. Add the onions and chicken, cooking until the chicken is no longer pink.

  3. Add Vegetables: Add the cabbage and carrots to the pan, stirring until the vegetables are tender.

  4. Add Noodles and Sauce: Add the yakisoba noodles and sauce to the pan, tossing everything together until the noodles are heated through and slightly charred.

  5. Serve: Taste and adjust seasoning with salt and pepper. Serve immediately and enjoy!

Notes

Vegetable Variations: You can add bell peppers, mushrooms, or bok choy for more flavor and nutrients.

Protein Options: You can swap chicken, shrimp, or tofu to customize the dish.

Noodles Alternative: If you can’t find yakisoba noodles, you can substitute them with Chinese stir-fry noodles or even spaghetti.
