Description

These Easy Enoki Beef Rolls are a simple, delicious dish combining savory beef and tender enoki mushrooms, wrapped in thin slices of beef and cooked in a flavorful soy sauce-based broth. Ready in just 20 minutes, it’s perfect for dinner or meal prep.


Ingredients

7 oz enoki mushrooms, trimmed

1 lb thinly sliced beef (ribeye, sirloin, or brisket)

1 tablespoon avocado oil (or any neutral flavored oil)

1 onion, thinly sliced

2 eggs, whisked

For the sauce:

⅓ cup water

¼ cup soy sauce (or tamari for gluten-free)

1 tablespoon cooking sake (or substitute with mirin)

1 tablespoon mirin

1 garlic clove, minced

Garnish:

Chopped green onions

Sesame seeds


Instructions

  1. Trim the bottom 1-2 inches off the enoki mushrooms, rinse under water, and separate into 1/4-inch bundles.
  2. Roll each bundle of enoki mushrooms in a thin slice of beef. Repeat with the remaining beef and mushrooms.
  3. Combine water, soy sauce, cooking sake, mirin, and minced garlic in a bowl to make the sauce. Set aside.
  4. Heat avocado oil in a large skillet over medium-high heat. Add sliced onions and cook until softened, about 3 minutes.
  5. Place the enoki beef rolls over the onions in a single layer. Pour the sauce over the rolls, cover, and bring to a boil. Reduce to a simmer and cook for 3-4 minutes until beef is cooked through.
  6. Uncover, pour the whisked eggs over the rolls, cover, and cook for 1 minute.
  7. Remove from heat, garnish with green onions and sesame seeds. Serve over warm rice.

Notes

For a gluten-free version, use tamari instead of soy sauce.

You can substitute the cooking sake with additional mirin if preferred.

For extra flavor, you can sprinkle additional sesame seeds or chili flakes on top before serving.

These rolls can also be made ahead and stored in the fridge for up to 2 days, reheating them gently in the skillet.
