Ingredients

2 cups roasted pistachios

¼ teaspoon salt


Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Roast the Pistachios: Spread the pistachios evenly on the baking sheet in a single layer. Roast for about 8-10 minutes, or until they become fragrant. Be sure not to burn them.
  3. Cool the Pistachios: Remove the pistachios from the oven and let them cool for 10 minutes.
  4. Grind the Pistachios: Transfer the roasted pistachios to a high-speed blender or food processor. Start grinding, and be patient—it will take about 15-20 minutes to reach a butter-like consistency. During the process, stop occasionally to scrape down the sides of the processor to ensure even grinding.
  5. Add Salt: Once the pistachio butter reaches your desired creamy consistency, add the salt and grind for a few more seconds to incorporate it.
  6. Store and Enjoy: Use a rubber spatula to transfer the pistachio butter into glass jars. It’s ready to enjoy!

Notes

If you prefer a smoother texture, continue grinding for a few more minutes, or add a small amount of neutral oil to make it creamier.

For a sweet twist, add maple syrup, honey, or any sweetener to taste.

If you enjoy richer flavors, consider adding cardamom or vanilla extract.
