Description

Looking for a healthy, quick breakfast or snack? This Easy Homemade Blueberry Yogurt combines fresh blueberries, lemon, and a touch of sugar to create a delicious, antioxidant-packed treat. Perfect for busy mornings or a light dessert, it’s simple to make, customizable, and ready in under 30 minutes. Whether you use fresh or frozen berries, this yogurt is a refreshing and nutritious option to start your day!

Ingredients

2 cups fresh blueberries

12 tsp lemon juice (freshly squeezed)

12 tbsp granulated sugar (adjust to preference)

Instructions

  • Combine Blueberries and Lemon Juice: In a small pot or saucepan, add the fresh blueberries and freshly squeezed lemon juice. Stir gently to combine.

  • Simmer the Blueberries: Set the pot over medium-high heat and simmer, stirring occasionally, until the berries begin to burst and release their juices, about 5–8 minutes.

  • Sweeten and Reduce the Sauce: Taste the mixture for sweetness. Add sugar to taste, stirring it in and continuing to simmer until most of the liquid is absorbed and the compote thickens, about 2–4 minutes.

  • Cool and Store the Compote: Remove the pot from heat and allow the blueberry compote to cool completely. Transfer it to a mason jar or small glass container and store it in the fridge for up to a week.

Notes

Fresh or Frozen Blueberries: Both fresh and frozen blueberries work for this recipe. If using frozen, ensure they are thawed and drained to avoid excess liquid.

Sweetener: Adjust the amount of sugar based on your sweetness preference. You can also substitute with honey, maple syrup, or stevia.

Storage: Store the compote in an airtight container in the fridge for up to a week. You can also prepare the compote ahead of time for a quick breakfast option.
