Description

Easy Ice Cream Sandwiches are a fun, simple dessert that combines soft cookies with creamy ice cream for a customizable and delicious treat. Perfect for summer days, parties, or as a sweet indulgence.


Ingredients

Cookies (24 large, soft cookies): Chocolate chip, oatmeal raisin, sugar cookies, or gingerbread work wonderfully.

Ice Cream (1 pint, your preferred flavor): Vanilla, chocolate, strawberry, mint chocolate chip, or salted caramel.

Sprinkles or Toppings (Optional): Rainbow sprinkles, chocolate sprinkles, chopped nuts, mini chocolate chips, or shredded coconut.


Instructions

  1. Lay out half of your cookies, flat-side up, on a baking sheet or large plate. If your cookies are hard, let them sit at room temperature for a few minutes to soften slightly.
  2. Take the ice cream out of the freezer and let it sit at room temperature for 5-10 minutes to soften.
  3. Scoop a generous amount of softened ice cream onto the flat side of each cookie. Use a spoon or offset spatula to evenly spread the ice cream to the edges of the cookie.
  4. Place the remaining cookies on top of the ice cream-filled ones, flat-side down, and gently press to form sandwiches.
  5. Add sprinkles or other toppings if desired. Roll the edges in sprinkles or dip them in melted chocolate and add chopped nuts or shredded coconut.
  6. Freeze the sandwiches on the baking sheet for at least 2-3 hours, or until the ice cream is firm. For best results, freeze them overnight.
  7. Once frozen, the ice cream sandwiches are ready to enjoy! Let them sit out for a few minutes before serving to soften slightly for easier eating.

Notes

Use store-bought cookies for ease, but make sure they’re soft enough for sandwiching.

Work quickly to prevent the ice cream from melting during assembly.

Make mini versions with smaller cookies for a fun twist!
