Description

A hearty and comforting easy Mexican casserole made with seasoned ground beef, beans, crunchy tortilla chips, and melty cheese—perfect for a crowd-pleasing lunch or dinner with minimal effort.


Ingredients

1 pound lean ground beef

1 can Ranch Style beans

1012 ounce bag tortilla chips, crushed

1 can Ro-tel tomatoes

1 small onion, chopped

2 cups shredded cheddar cheese, divided

1 package taco seasoning

1 can cream of chicken soup

1/2 cup water

Sour cream, for serving

Salsa, for serving


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large skillet over medium heat, brown the ground beef and drain excess fat.
  3. Stir in the Ranch Style beans, Ro-tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water. Simmer until well combined and heated through.
  4. Grease a 9×13-inch casserole dish and spread a layer of crushed tortilla chips on the bottom.
  5. Add a layer of the meat mixture, then sprinkle with half of the shredded cheddar cheese.
  6. Repeat the layers once more.
  7. Cover with foil and bake for 20–30 minutes, until hot and bubbly.
  8. Let rest for 5–10 minutes before serving. Top with sour cream and salsa as desired.

Notes

Ground turkey can be used instead of beef for a lighter option.

Black beans or pinto beans work well as substitutes.

Add jalapeños or spicy tomatoes for extra heat.

The tortilla chips will soften as the casserole bakes.

Best served fresh, but leftovers keep well for several days.
