Ingredients
For the Pasta:
12 ounces spaghetti (whole wheat or your favorite type)
For the Mushroom Sauce:
2 tablespoons olive oil
1 pound cremini mushrooms, sliced
4–6 garlic cloves, chopped
Kosher salt and ground pepper, to taste
1/2 cup grated Pecorino Romano cheese, plus more for serving
2–3 tablespoons coarsely chopped fresh parsley leaves
Instructions
- Cook the Pasta:
- Cook the spaghetti in salted water according to the package instructions. Reserve 2/3 cup of the pasta water before draining the pasta.
- Sauté the Mushrooms:
- Heat olive oil in a large skillet over medium heat. Add the sliced cremini mushrooms and cook for 5-7 minutes until tender and browned. Stir in the minced garlic, salt, and pepper. Let the garlic cook for 1 minute.
- Combine the Pasta:
- Add the drained pasta to the skillet with the mushrooms and garlic. Add grated Pecorino Romano cheese and reserved pasta water. Toss well using tongs until the cheese melts and coats the pasta.
- Garnish & Serve:
- Stir in the chopped fresh parsley and serve immediately. Top with extra Pecorino Romano cheese for added flavor!

For a vegetarian dish, use plant-based cheese for a vegan option.
