Ingredients
1 cup self-rising flour (or 1 cup all-purpose flour + 1 1/2 tsp baking powder)
1 cup non-fat plain Greek yogurt
3 oz turkey pepperoni, chopped
3 oz smoked turkey, chopped
1/4 cup 2% low-fat cottage cheese
1/4 cup pizza sauce
1/4 cup shredded mozzarella
1/4 tsp each: dried oregano, dried basil, garlic powder
Instructions
-
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. (If using an air fryer, skip this step.)
-
In a small bowl, combine the turkey pepperoni, smoked turkey, cottage cheese, pizza sauce, mozzarella, oregano, basil, and garlic powder. Set aside.
-
In a separate bowl, combine the flour and Greek yogurt. Stir until a dough forms, then knead on a floured surface until smooth.
-
Divide the dough into 4 equal pieces and roll each into a thin circle, about the size of your hand.
-
Place 1/4 of the filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal.
-
For air frying: Spray the air fryer basket with cooking spray. Place the pockets inside and cook at 400°F for about 7 minutes, checking after 6 minutes for golden brown tops.
-
For baking: Spray a baking sheet with cooking spray. Place the pockets on the sheet and bake at 400°F for 17-20 minutes, until golden brown.
-
Let the pockets cool for a few minutes before serving.
Notes
Variations:
Vegetarian Pizza Pockets: Replace the turkey with vegetables like bell peppers, onions, mushrooms, or spinach.
Spicy Pizza Pockets: Add red pepper flakes, jalapeños, or hot sauce for extra heat.
Meatball Pizza Pockets: Use small cooked meatballs for a heartier filling.
Gluten-Free Version: Use a gluten-free flour blend instead of self-rising flour.
Storage/Reheating: Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days. Reheat in the air fryer at 350°F for 3-4 minutes or bake at 350°F for about 5 minutes.
