Juicy and flavorful southwest turkey burgers made with roasted poblano peppers, jalapeño, warm spices, and creamy chipotle mayo for a bold, satisfying twist on a classic burger.
Ingredients
1 lb ground turkey (93/7)
1 tablespoon mayonnaise
1 large poblano pepper, roasted, peeled, and minced (or ½ cup roasted peppers)
½ jalapeño, minced
¼ cup fresh cilantro, minced
3 tablespoons crumbled cotija cheese
1 teaspoon ancho chile powder
½ teaspoon ground cumin
2 teaspoons dehydrated onion
½ teaspoon garlic powder
1 teaspoon soy sauce
½ teaspoon kosher salt
4 slices pepper-jack cheese
½ cup mayonnaise (for chipotle mayo)
2 tablespoons minced canned chipotle chile
1 garlic clove, grated
1 tablespoon lime juice
1 teaspoon honey
4 burger buns
¾ cup guacamole
1 ripe tomato, sliced
¼ red onion, thinly sliced
Instructions
- Roast the poblano pepper over an open flame or under the broiler until blistered. Steam briefly, then peel, seed, and dice.
- In a large bowl, gently mix ground turkey, mayonnaise, roasted poblano, jalapeño, cilantro, cotija, ancho chile powder, cumin, dehydrated onion, garlic powder, soy sauce, and salt until just combined.
- Divide into four patties and press a small indentation into the center of each. Chill for 15–20 minutes to firm.
- In a small bowl, mix mayonnaise, chipotle chile, garlic, lime juice, and honey. Refrigerate until ready to use.
- Heat a lightly oiled grill pan or cast iron skillet over medium heat.
- Cook patties for about 5 minutes per side, until browned and cooked through (165°F internal temperature).
- Add pepper-jack cheese after flipping and allow it to melt.
- Toast buns. Spread chipotle mayo on one side and guacamole on the other.
- Assemble burgers with turkey patty, tomato slices, and red onion. Serve warm.
Notes
Chilling patties helps them hold together during cooking.
Adjust jalapeño and chipotle for desired spice level.
These burgers work well grilled or pan-seared.
Great served lettuce-wrapped for a lighter option.
