Description

This easy taco pie brings all the bold, comforting flavors of taco night into a hearty, sliceable dish with seasoned beef, beans, veggies, and melted cheese baked in a crisp pie crust.

Ingredients

1 (9-inch) ready-to-bake pie crust

1 pound ground beef

1 teaspoon avocado oil

1 cup diced green bell pepper

1/2 cup diced white onion

1 (2-ounce) packet taco seasoning

1/23/4 cup water

1/2 cup jarred salsa

1 (16-ounce) can refried beans

3/4 cup corn kernels

1 cup shredded Mexican cheese blend

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the pie crust into a pie dish, crimp edges, and prick the bottom with a fork.
  3. Bake the crust for 12–15 minutes until lightly golden. Remove and set aside.
  4. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat and set aside.
  5. Add avocado oil to the skillet and sauté bell pepper and onion for 6–8 minutes until softened.
  6. Return the beef to the skillet, add taco seasoning and water, and simmer until thickened.
  7. Stir in salsa, refried beans, and corn until well combined.
  8. Spread the mixture evenly into the prebaked pie crust.
  9. Top with shredded cheese.
  10. Bake for 12–15 minutes until cheese is melted and bubbly.
  11. Let cool slightly before slicing and serving with desired toppings.

Notes

Prebaking the crust helps prevent sogginess.

Customize heat level with mild or spicy salsa.

Ground turkey or chicken can be substituted for beef.

Let the pie rest briefly for cleaner slices.

Serve with fresh toppings for added texture.
