Ingredients

2 packs enoki mushrooms

3 tbsp gochujang (Korean chili paste)

2 tbsp soy sauce

1 tbsp sesame oil

1 tsp sesame seeds

1.5 tbsp brown sugar

3 tbsp gochugaru (Korean chili flakes)

1 head garlic, minced

1 cup water (add more if needed)

1 pack vermicelli noodles

1 tbsp shredded cheese (optional)

1 tbsp green onions, sliced

1 jalapeño, sliced


Instructions

  1. Wash and slice the enoki mushrooms into thin, wide, flat pieces.
  2. Heat oil in a pan and sear the enoki mushrooms until tender.
  3. In a bowl, combine minced garlic, gochujang, soy sauce, sesame oil, brown sugar, gochugaru, sesame seeds, and water. Stir to combine.
  4. Add the sauce to the pan with the mushrooms and bring to a simmer. Add the vermicelli noodles and toss to coat.
  5. Slice the jalapeño and add it to the pan. Top with shredded cheese and sliced green onions.
  6. Serve hot and enjoy the spicy, savory flavors.
