Description

Chimichurri Steak Skewers are a flavorful fusion of Argentinian flavors and tender steak, marinated in a tangy, herbaceous chimichurri sauce and cooked to perfection in the air fryer. Perfect for any occasion, these skewers are an indulgent, yet easy-to-make treat!


Ingredients

For the Chimichurri Sauce:

½ cup (107 g) extra virgin olive oil

¼ cup (60 g) apple cider vinegar

½ medium shallot, finely diced (about 2 tablespoons)

1 small jalapeno, seeded and finely diced (about 2 tablespoons)

½ cup fresh parsley, minced

1 teaspoon garlic, minced

1 ½ teaspoons fresh oregano, minced

1 teaspoon fresh basil, minced

1 teaspoon fresh cilantro, minced

½ teaspoon fresh thyme, minced

¼ teaspoon kosher salt

1 pinch red pepper flakes

For the Skewers:

Wooden skewers, soaked in water for 30 minutes

1 pound steak, cut into 1-inch cubes (top sirloin or ribeye work well)

1 teaspoon kosher salt

½ teaspoon black pepper

1 cup chimichurri sauce, from the recipe above, divided


Instructions

  1. Make the Chimichurri Sauce: In a large bowl, combine olive oil, apple cider vinegar, shallot, jalapeno, parsley, garlic, oregano, basil, cilantro, thyme, salt, and red pepper flakes. Stir well to combine. Let the mixture rest at room temperature for 1-2 hours.
  2. Prepare the Skewers: Soak the wooden skewers in water for at least 30 minutes to prevent burning during cooking.
  3. Marinate the Steak: Season the steak cubes with kosher salt and black pepper. Toss the steak cubes in ¼ cup of the chimichurri sauce, reserving the rest for serving. Let the steak marinate for 1-2 hours.
  4. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C).
  5. Assemble the Skewers: Thread the marinated steak cubes onto the soaked skewers, leaving space between each piece for even cooking.
  6. Cook the Skewers: Arrange the skewers in a single layer in the air fryer basket. Air fry for 4-6 minutes, flipping halfway through, until browned and cooked to your desired doneness.
  7. Serve: Remove the skewers from the air fryer, brush with the reserved chimichurri sauce, and serve with the rest of the sauce on the side.

Notes

Vegetarian Option: Substitute steak with tofu, portobello mushrooms, or paneer for a vegetarian version.

Make it Spicier: Add more jalapenos or chili flakes to the chimichurri sauce for extra heat.

Grill Option: These skewers can also be grilled on medium-high heat for 4-6 minutes per side.
