  • 1 large egg white
  • 2 tablespoons (16g) unsweetened cocoa powder
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon (12g) granulated sugar

Instructions

  • Preheat the Oven: Preheat the oven to 350°F (177°C). Grease a small 4×6-inch baking dish or ramekin.
  • Melt Chocolate: In a heatproof bowl over simmering water (double boiler method), melt the chocolate, butter, and oil until smooth. Remove from heat and let cool slightly.
  • Prepare the Egg Mixture: In a separate bowl, whisk together the egg, cocoa powder, vanilla extract, and salt.
  • Whip the Egg White: In another bowl, beat the egg white and sugar until stiff peaks form.
  • Combine: Gently fold the whipped egg white into the chocolate mixture until just combined.
  • Bake: Pour the batter into the prepared baking dish, and sprinkle a little sugar on top. Bake for 25-30 minutes. The cake will rise and sink slightly as it cools, giving it a fudgy texture.
