Ingredients
- 2 oz (57g) high-quality semi-sweet or bittersweet chocolate
- 1 tablespoon (14g) unsalted butter
- 1 tablespoon (15ml) vegetable or canola oil
- 1 large egg
- 1 large egg white
- 2 tablespoons (16g) unsweetened cocoa powder
- 1/4 teaspoon vanilla extract
- Pinch of salt
- 1 tablespoon (12g) granulated sugar
Instructions
- Preheat the Oven: Preheat the oven to 350°F (177°C). Grease a small 4×6-inch baking dish or ramekin.
- Melt Chocolate: In a heatproof bowl over simmering water (double boiler method), melt the chocolate, butter, and oil until smooth. Remove from heat and let cool slightly.
- Prepare the Egg Mixture: In a separate bowl, whisk together the egg, cocoa powder, vanilla extract, and salt.
- Whip the Egg White: In another bowl, beat the egg white and sugar until stiff peaks form.
- Combine: Gently fold the whipped egg white into the chocolate mixture until just combined.
- Bake: Pour the batter into the prepared baking dish, and sprinkle a little sugar on top. Bake for 25-30 minutes. The cake will rise and sink slightly as it cools, giving it a fudgy texture.
- Cool and Serve: Let the cake cool on a wire rack before serving. Optionally, top with whipped cream, vanilla ice cream, or chocolate ganache.
