Ingredients

  • ¼ cup (60 ml) honey or maple syrup
  • ½ cup (120 g) plain Greek yogurt (full fat preferred)
  • 1 teaspoon vanilla extract
  • 1 cup (90 g) unsweetened shredded coconut
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round or loaf pan; line with parchment paper if desired.
  2. In a medium bowl, whisk together eggs, honey (or maple syrup), Greek yogurt, and vanilla extract.
  3. Stir in shredded coconut, baking soda, and salt until just combined.
  4. Pour batter into prepared pan and smooth the top.
