Description

Looking for a quick and easy way to make smooth, silky lemon curd at home? This Foolproof Thermomix Lemon Curd recipe takes just 17 minutes to make and produces perfect results every time. Using your Thermomix (or similar appliance), enjoy vibrant, tangy lemon curd that’s ideal for spreading, filling tarts, or simply enjoying by the spoonful.

Ingredients

For the Lemon Curd:

2 lemons, zest only (avoid the white pith)

2 whole eggs, room temperature

2 egg yolks, room temperature

165g caster sugar

80g unsalted butter, chilled and cubed

90g lemon juice (about 23 lemons)

Instructions

  • Grate the Lemon Zest:
Place the lemon zest into the Thermomix bowl. Secure the lid and grate at Speed 10 for 10 seconds. Scrape down the sides and repeat until the zest is very fine.

  • Combine and Cook:
Add the whole eggs, egg yolks, caster sugar, chilled butter, and lemon juice to the bowl. Cook at 80°C (176°F), Speed 4 for 10 minutes.

  • Check & Finish:
After 10 minutes, check the consistency of the curd. If it’s too thin, cook for an additional 1-2 minutes at 90°C (194°F), Speed 4.

  • Strain for a Silky Texture:
Pour the hot curd through a fine-mesh sieve into a clean jar or container to remove any zest bits or chalazae.

  • Cool & Store:
Seal the jar or container and refrigerate. The lemon curd keeps for 1-2 weeks in the fridge.

Notes

Time Savings: This Thermomix method is over 60% faster than traditional stovetop methods and requires no constant whisking.

Make-Ahead: You can make the curd up to one week ahead and store it in the fridge.

Serving Suggestions: Perfect as a topping for toast, cakes, tarts, or as a spoonable treat.

Troubleshooting: If your curd is too thin, simply whisk in softened butter off-heat to thicken it.
