Description

French Gingerbread Cakes are a perfect blend of warm spices, molasses, and honey, offering a soft, flavorful dessert with a slightly hearty texture, ideal for holiday gatherings or cozy occasions.

Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 tablespoon ground ginger

1 teaspoon ground cinnamon

½ teaspoon ground cloves

¼ teaspoon salt

½ cup brown sugar, packed

½ cup honey

½ cup molasses

1 large egg

½ cup warm milk

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Grease and flour a loaf pan or mini muffin tins.
  2. Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, ground ginger, cinnamon, cloves, and salt.
  3. Combine Sugar and Wet Ingredients: In another bowl, mix together brown sugar, honey, molasses, egg, warm milk, melted butter, and vanilla extract until smooth.
  4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.
  5. Fill the Pan: Pour the batter into the prepared pan, filling about two-thirds full.
  6. Bake: Bake for 35-40 minutes for loaf pan or 18-20 minutes for mini muffin tins, until a toothpick inserted comes out clean or with moist crumbs.
  7. Cool: Let the cakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice and Serve: Once cooled, slice or serve the mini cakes. Optionally dust with powdered sugar or drizzle with icing for a festive touch.

Notes

For a vegan version, use flax eggs and vegan butter.

You can swap molasses for maple syrup for a different flavor.

Chopped nuts or dried fruits can be added for extra texture.
