Description

Fresh Tomato Galette is a rustic savory dish featuring ripe tomatoes, creamy mozzarella cheese, and a flaky, buttery crust, perfect for a light lunch, dinner, or appetizer.


Ingredients

1 sheet of puff pastry (or homemade pie dough)

34 medium ripe tomatoes, sliced

1/2 cup shredded mozzarella cheese (or goat cheese for a tangier flavor)

1 tbsp olive oil

1 tbsp balsamic vinegar (optional)

1 tbsp fresh basil, chopped

1/2 tsp garlic powder

Salt and pepper, to taste

1 egg (for egg wash)

Fresh thyme or rosemary for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry to about 1/8 inch thick and transfer it to the prepared baking sheet.
  3. Sprinkle shredded mozzarella (or goat cheese) in the center of the pastry, leaving a border around the edges. Arrange the sliced tomatoes on top, overlapping them slightly.
  4. Drizzle olive oil over the tomatoes and season with salt, pepper, and garlic powder.
  5. Gently fold the edges of the pastry over the tomatoes to create a rustic, open-faced crust. The center should remain open to showcase the tomatoes.
  6. Whisk the egg with 1 tablespoon of water and brush the mixture over the folded edges for a golden, shiny crust.
  7. Bake for 30-35 minutes, until the crust is golden and the tomatoes are tender.
  8. Once out of the oven, drizzle with balsamic vinegar (if using) and garnish with fresh basil and thyme or rosemary. Let it cool slightly before slicing and serving.

Notes

Substitute mozzarella with goat cheese, feta, or ricotta for different flavor profiles.

Add fresh herbs like thyme, rosemary, or oregano for extra fragrance.

For a vegan version, use dairy-free puff pastry and cheese alternatives.
