Description
A flavorful and hearty Frito Pie Casserole made with ground chuck, beans, vegetables, and topped with cheese and corn chips. Perfect for a satisfying and easy meal.
Ingredients
- 1 pound ground chuck
- 1 cup chopped yellow onion
- 1 green bell pepper, chopped
- 1 ¼ cups low-sodium chicken stock
- 1 (15 ounce) can red kidney beans, drained and rinsed
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can sweet whole kernel corn, drained
- 1 (1 ounce) envelope taco seasoning mix
- 1 chipotle chile pepper in adobo sauce, finely chopped, plus 1 tablespoon adobo sauce
- 8 ounces sharp Cheddar cheese, shredded, divided
- 2½ cups corn chips (such as Fritos)

- sour cream, guacamole, and salsa, for serving
Instructions
- Preheat oven to 350°F (175°C).
- Heat a large skillet over medium-high heat. Add ground chuck and cook, stirring and breaking up meat into smaller pieces, until browned and nearly cooked through, about 5 to 7 minutes.
- Add chopped onion and bell pepper; cook, stirring often, until beef is fully cooked and onion is softened, about 4 minutes.
- Stir in chicken stock, kidney beans, diced tomatoes, corn, taco seasoning, chopped chipotle chile, and adobo sauce. Bring to a boil over medium-high heat.
- Reduce heat to medium and simmer, stirring frequently, until slightly thickened, about 7 to 10 minutes. Remove from heat and stir in 1 cup of shredded Cheddar cheese.
- Transfer the beef mixture to a 9 x 13-inch baking dish and spread evenly.
- Top with remaining Cheddar cheese and evenly sprinkle corn chips over the top.
- Bake uncovered until the mixture is bubbling and cheese is melted and beginning to brown, about 18 to 20 minutes.
- Let rest for 10 minutes. Garnish with sliced scallions and serve with sour cream, guacamole, and salsa.
Notes
- You can adjust the spice level by adding more or less chipotle chile.
- Use your favorite brand of corn chips for topping.
- For a vegetarian version, substitute the ground chuck with plant-based protein or omit it entirely.
- Make sure to let the casserole rest before serving to allow the flavors to meld together.
