Ingredients
4 slices sourdough bread
1 cup fresh mushrooms (button or cremini), chopped
2 cloves garlic, minced
2 tablespoons unsalted butter, divided
1 cup sharp cheddar cheese, shredded
1 teaspoon fresh thyme (optional)
Instructions
- Chop the mushrooms and mince the garlic.
- Melt 1 tablespoon of butter in a skillet over medium heat.
- Add the mushrooms and sauté until soft and golden.
- Add the garlic and thyme, stirring until fragrant, then remove from heat.
- Assemble the sandwiches by layering mushrooms and shredded cheese between slices of sourdough bread.
- Heat the remaining butter in a skillet over medium-low heat.
- Grill the sandwiches until golden brown on both sides and the cheese is fully melted.
- Remove from heat, let cool slightly, slice, and serve warm.

Gruyère or mozzarella can be used instead of cheddar.
