Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, cut into cubes
  • ¼ cup olive oil
  • 3 tablespoons butter, melted
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven and prepare the pan – Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Season the potatoes – In a large bowl, toss potato cubes with 2 tablespoons of olive oil, ¼ teaspoon of garlic powder, salt, and pepper. Spread potatoes in a single layer on the prepared baking sheet.
  • Prepare the chicken – In a small bowl, mix melted butter, 2 tablespoons of olive oil, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Coat the chicken – Dip each chicken breast into the garlic Parmesan mixture, ensuring it’s fully coated, and place it on the baking sheet with the potatoes.
  • Bake – Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
