Description
A flavorful and moist Garlic Parmesan Chicken Meatloaf topped with optional mozzarella cheese, perfect for a family dinner.
Ingredients
- 1 ½ lbs ground chicken
- ¾ cup seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs
- 4 cloves garlic, minced
- ½ yellow onion, finely chopped
- ¼ cup milk
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup shredded mozzarella cheese (optional for topping)
- 1 tablespoon olive oil (for brushing)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, eggs, garlic, onion, milk, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined—do not overmix.
- Shape the mixture into a loaf shape and place it on the prepared baking sheet or into the loaf pan. If desired, sprinkle shredded mozzarella cheese over the top and gently press it into the loaf. Brush the top of the meatloaf with olive oil to help create a golden crust.
- Bake for 45–50 minutes or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 5–10 minutes before slicing. Serve warm with a side of mashed potatoes, veggies, or a fresh salad.
Notes
- You can substitute ground chicken with ground turkey if preferred.
- The mozzarella cheese topping is optional but adds a delicious cheesy layer.
- For added flavor, use fresh garlic and parsley instead of pre-packaged alternatives.
