Description

Ghost Meringues are airy, crisp, and lightly sweet cookies piped into whimsical ghost shapes—perfect for Halloween. With just a few pantry ingredients, they bake into festive treats that are as fun to make as they are to eat.


Ingredients

4 large egg whites, room temperature

1 cup granulated sugar

1/4 teaspoon cream of tartar

1/2 teaspoon vanilla extract

Mini chocolate chips or melted chocolate (for eyes)


Instructions

  1. Preheat oven to 200°F (95°C) and line two baking sheets with parchment paper. Ensure mixing bowl and whisk are clean and dry.
  2. Beat egg whites on medium speed until foamy, about 1–2 minutes.
  3. Add cream of tartar, then gradually add sugar, 1 tablespoon at a time, while mixing. Continue for 5–7 minutes until sugar is dissolved.
  4. Increase speed to high and whip until stiff, glossy peaks form. Rub a bit of meringue between your fingers—it should feel smooth, not gritty.
  5. Mix in vanilla just until combined.
  6. Transfer meringue to a piping bag fitted with a large round tip. Pipe tall ghost shapes by squeezing in one spot and lifting to create a curl at the top.
  7. Press two mini chocolate chips onto each ghost for eyes, or dot with melted chocolate.
  8. Bake for 1 hour without opening the oven door.
  9. Turn off oven and leave meringues inside for 1 additional hour to cool and dry.
  10. Remove, cool fully, and store airtight.

Notes

Dip cooled bases in melted chocolate for a richer treat.

Swap vanilla for almond, peppermint, or orange extract for variety.

Pipe extra details like arms, capes, or mouths with colored gel.

For striped ghosts, paint food coloring lines inside the piping bag before filling.
