Description

This Ghostly Lasagna layers creamy ricotta, rich marinara, and melty mozzarella into a comforting, festive dish perfect for Halloween or a cozy family dinner. With no-boil noodles, it’s simple to assemble and delivers cheesy, savory goodness in every bite.


Ingredients

12 no-boil lasagna noodles

1 ½ cups whole-milk ricotta cheese

3 cups shredded fresh mozzarella cheese

¾ cup grated Parmesan cheese

3 cups marinara sauce (homemade or store-bought)

¼ cup fresh basil, chopped

2 large eggs

Salt and pepper, to taste


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a bowl, mix ricotta, eggs, half the Parmesan, basil, salt, and pepper until smooth.
  3. Spread a thin layer of marinara on the bottom of the dish. Place 3 noodles on top.
  4. Spread half of the ricotta mixture over noodles, followed by more marinara and mozzarella.
  5. Repeat with another layer of noodles, ricotta mixture, marinara, and mozzarella.
  6. Top with the final noodles, remaining marinara, and mozzarella.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake another 15 minutes until golden and bubbly.
  8. Let rest 10 minutes before slicing and serving.

Notes

Add cooked ground beef, sausage, or turkey for a heartier version.

Mix spinach into ricotta for extra vegetables.

For Halloween, cut ghost shapes from mozzarella slices and place on top before baking.

Let the lasagna rest before slicing to avoid watery layers.
