Description

Rich, fudgy gingerbread brownies with deep chocolate flavor and warm holiday spices, featuring a crackly top and dense, indulgent center that tastes like festive comfort in every bite.


Ingredients

170 g unsalted butter

200 g dark chocolate, chopped

200 g light brown sugar

3 large eggs

60 ml light or mild molasses

1 teaspoon vanilla extract

140 g all-purpose flour

40 g cocoa powder

½ teaspoon baking powder

½ teaspoon salt

2 teaspoons ground ginger

1½ teaspoons ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground cloves

¼ teaspoon ground allspice


Instructions

  1. Melt the butter and chopped dark chocolate together, then let cool for about 5 minutes.
  2. Whisk the brown sugar into the melted chocolate until glossy.
  3. Add eggs one at a time, whisking well after each addition.
  4. Stir in molasses and vanilla extract.
  5. In a separate bowl, whisk together flour, cocoa powder, baking powder, salt, and all gingerbread spices.
  6. Sift dry ingredients into the wet mixture and gently fold until smooth.
  7. Pour batter into a lined 20 cm (8-inch) square pan and smooth the top.
  8. Bake at 180°C (350°F) for 25–30 minutes until edges are set and the center has moist crumbs.
  9. Cool completely in the pan before slicing.

Notes

Use light or mild molasses for best flavor balance.

Do not overbake to keep brownies fudgy.

Optional toppings include white chocolate chips or crystallized ginger.

Brownies slice best once fully cooled.
