Description
A rich and creamy holiday cheesecake infused with warm gingerbread spices, molasses, and brown sugar, set on a ginger cookie crust and topped with fluffy cinnamon whipped cream.
Ingredients
Aluminum foil
2 cups gingerbread cookie crumbs
1/4 cup unsalted butter, melted
3 (8 oz) packages cream cheese, room temperature
1 cup dark brown sugar
1/3 cup unsulphured molasses
1 tbsp lemon juice
1 tbsp vanilla extract
2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/4 tsp ground allspice
Pinch of salt
3 eggs, room temperature
Cinnamon Whipped Cream:
1 cup heavy whipping cream
1/4 cup confectioners’ sugar
1/2 tsp vanilla extract
1/2 tsp cinnamon
Pinch of salt
Instructions
- Preheat oven to 350°F and grease a 9-inch springform pan. Wrap the outside of the pan in several layers of aluminum foil for the water bath.
- Mix cookie crumbs with melted butter and press firmly into the bottom of the pan.
- Beat cream cheese and brown sugar until smooth. Add molasses, lemon juice, vanilla, ginger, cinnamon, cloves, nutmeg, allspice, and salt, mixing until combined.
- Add eggs one at a time, mixing just until incorporated. Pour batter over the crust and tap to release air bubbles.
- Place pan in a larger baking dish and pour hot water around it until it reaches 1 inch up the sides.
- Bake for about 1 hour, until edges are set and the center jiggles slightly. Turn off the oven and let the cheesecake cool inside for 1–2 hours.
- Remove from oven and water bath, run a knife around the edge, and refrigerate at least 4 hours.
- For whipped cream, beat heavy cream, confectioners’ sugar, vanilla, cinnamon, and salt until stiff peaks form.
- Top cheesecake with cinnamon whipped cream before serving.
Notes
Gingersnaps, speculoos, or graham crackers all work for the crust.
Increase molasses for deeper flavor.
Top with crushed cookies, caramel, or sugared cranberries for festivity.
Cool slowly to prevent cracking.
