Ingredients

2 tbsp butter (dairy-free options: Smart Balance or Earth Balance)

1/2 tsp minced garlic

1 tsp onion powder

1/2 tsp salt

1 tsp thyme

Pinch of nutmeg (optional but recommended)

6 tbsp gluten-free all-purpose flour

2 cups gluten-free chicken broth

2 cups chopped cooked chicken (rotisserie chicken works great)

1 cup milk (dairy or non-dairy such as almond, cashew, or coconut milk)


Instructions

  • Sauté Garlic:

    • In a large saucepan, heat butter over medium-high heat. Sauté minced garlic until fragrant and tender.

  • Make the Roux:

    • Add gluten-free flour, onion powder, thyme, salt, and optional nutmeg to the pan. Stir to combine and cook for 1 minute.

  • Add Broth:

    • Gradually pour in chicken broth, stirring constantly until the mixture thickens, about 2 minutes.

  • Add Chicken:

    • Stir in the chopped cooked chicken and reduce the heat to low. Let it simmer for 10–15 minutes, stirring occasionally.

  • Add Milk:

    • Stir in milk (dairy or non-dairy) and cook for an additional 5 minutes, ensuring everything is well combined and heated through.

  • Serve:

    • Taste and adjust seasoning if necessary. Serve as is, or use it in casseroles, soups, or stews.

Notes

Dairy-Free Option: Use non-dairy butter and milk, such as almond, coconut, or cashew milk.

Extra Flavor: For a little kick, add black pepper, cayenne, or a dash of hot sauce.
