Description

This Gluten Free Vegan Green Bean Casserole is a creamy, flavorful twist on the classic holiday side dish. Made with tender green beans, caramelized onions, mushrooms, dairy-free cream cheese, and optional crispy onions on top, it’s comforting, allergy-friendly, and perfect for gatherings.


Ingredients

1 pound fresh green beans, washed & trimmed

2 tablespoons olive oil

1 cup halved and thinly sliced yellow onions (about 1 onion)

8 oz white button mushrooms, halved

9 ounces dairy-free cream cheese

1 clove garlic (1/2 teaspoon minced)

1 tablespoon Dijon mustard

1 teaspoon whole-grain mustard

1 teaspoon dried parsley

Salt and pepper, to taste

1/2 cup vegetable broth (or beef broth if not vegan)

Optional: Gluten-free French fried onions


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Bring a large pot of water to a boil and cook green beans until bright green, about 6 minutes. Transfer to an ice bath, drain, and set aside.
  3. In an oven-proof skillet, heat olive oil over medium heat. Cook onion until tender.
  4. Add mushrooms, season with salt and pepper, and cook until golden and caramelized.
  5. Add the onion-mushroom mixture to the green beans and toss lightly. (For a smooth sauce, reserve to blend later.)
  6. In the same skillet, deglaze with broth, scraping up browned bits. Add garlic and cook for 1 minute.
  7. Stir in Dijon mustard, whole-grain mustard, dairy-free cream cheese, dried parsley, and remaining broth. Taste and adjust seasoning.
  8. Return green bean mixture to the skillet and coat with sauce. Cook until heated through, adding more broth if needed.
  9. If using, sprinkle gluten-free fried onions on top during the last 5 minutes of baking.
  10. Bake until hot and bubbly, then serve warm.

Notes

Blend caramelized onions and mushrooms for a smoother sauce.

Use beef broth if not vegan for richer flavor.

Add nutritional yeast for a cheesy flavor boost.

Top with gluten-free crackers or toasted almonds if fried onions aren’t available.

Best served warm; leftovers reheat well with a splash of broth.
