Description

Gorditas are thick, golden Mexican corn pockets made from masa harina, fried or baked, and stuffed with flavorful fillings like chicken, beans, cheese, and fresh vegetables. They’re quick, versatile, and perfect as a snack, main dish, or party food.


Ingredients

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1 teaspoon salt
  • Vegetable oil, for frying
  • Shredded chicken, lettuce, tomato, crumbled cheese, or other toppings for serving

Instructions

  1. In a large bowl, mix masa harina, warm water, and salt until a soft dough forms.
  2. Divide dough into 12 equal pieces and roll into balls.
  3. Flatten each ball into a round about 1/4 inch thick.
  4. Heat 1/2 inch of vegetable oil in a skillet over medium-high heat.
  5. Fry gorditas in batches for 2–3 minutes per side, until golden brown and slightly puffed.
  6. Drain on paper towels and keep warm.
  7. Serve with fillings such as shredded chicken, beans, cheese, lettuce, tomato, and salsa.

Notes

  • Can bake at 400°F (200°C) for 10–12 minutes, flipping halfway, for a lighter version.
  • Add chili powder or minced jalapeños to the dough for spiciness.
  • Fill with carne asada, refried beans, scrambled eggs, or vegetables for variety.
  • If dough feels dry, add a little more warm water to prevent cracking.
  • Best served warm, but can be reheated in a skillet or oven.
