Description
This Grilled Bruschetta Chicken features marinated chicken breasts grilled to perfection and topped with fresh tomato-basil bruschetta, melted mozzarella, and a drizzle of balsamic reduction for a flavorful and healthy dinner option.
Ingredients
For the Chicken Marinade:
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon Dijon mustard
1/4 cup lemon juice
1 teaspoon lemon zest
1.5 tablespoons minced garlic
1/8 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon black pepper
24 oz. boneless chicken breasts (about 4 breasts)
For the Bruschetta Topping:
4 large Roma tomatoes, finely diced
1/4 teaspoon salt
1/2 small red onion, finely minced
2 garlic cloves, finely grated
1/8 teaspoon ground pepper
1 tablespoon olive oil
1 tablespoon balsamic vinegar
8–10 fresh basil leaves, julienned
For the Bruschetta Chicken:
4 oz. mozzarella cheese, thinly sliced (fresh mozzarella in log form works well)
Balsamic reduction, for topping
Instructions
- Prepare the chicken marinade by combining balsamic vinegar, olive oil, soy sauce, honey, Dijon mustard, lemon juice, lemon zest, garlic, red pepper flakes, salt, and black pepper in a jar. Shake until well combined.
- Place chicken breasts in a gallon-size Ziploc bag or casserole dish. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 30 minutes or up to overnight.
- To prepare the bruschetta topping, sprinkle the diced tomatoes with 1/4 teaspoon salt and let drain for 10 minutes. Transfer to a mixing bowl and add red onion, garlic, black pepper, olive oil, balsamic vinegar, and fresh basil. Toss to combine and set aside.
- Preheat the grill to 375°F.
- Remove the chicken from the marinade, letting the excess drip off. Reserve the marinade for basting.
- Place the chicken breasts on the grill over direct heat. Grill for 4 minutes, then brush with reserved marinade. Flip the chicken and grill for another 4 minutes.
- Move the chicken to indirect heat and grill for an additional 10 minutes or until the internal temperature reaches 155°F–160°F.
- Top each chicken breast with a slice of mozzarella cheese. When the chicken reaches an internal temperature of 165°F and the cheese has melted, remove from the grill and let rest for 5 minutes.
- Serve the chicken topped with bruschetta mixture and a drizzle of balsamic reduction. Enjoy!
Notes
Marinating the chicken overnight enhances the flavor.
You can use store-bought balsamic reduction if short on time.
Ensure the chicken reaches an internal temperature of 165°F for safe consumption.
