Description

Grilled Cowboy Butter Lobster Tails are a luxurious and flavorful seafood dish, combining tender lobster with a rich, garlicky cowboy butter for an indulgent experience.

Ingredients

4 lobster tails

1 cup unsalted butter, softened

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 teaspoon paprika

1 teaspoon lemon juice

Salt and pepper, to taste

Lemon wedges, for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a medium-sized bowl, combine softened butter, minced garlic, parsley, chives, paprika, lemon juice, salt, and pepper. Stir until smooth.
  3. Cut down the center of the lobster shells with kitchen shears, stopping just before the tail. Gently pull apart the shell and lift the lobster meat slightly out.
  4. Brush the lobster meat generously with cowboy butter, ensuring some butter seeps into the shell. Save some butter for basting while grilling.
  5. Grill the lobster tails meat side up for about 5-7 minutes. Baste with remaining cowboy butter halfway through grilling.
  6. Check for doneness: the lobster meat should turn opaque and feel firm to the touch. Avoid overcooking.
  7. Remove lobster tails from the grill.
  8. Squeeze fresh lemon juice over the lobster and serve with additional lemon wedges on the side.

Notes

For a spicy kick, add cayenne pepper or red pepper flakes to the cowboy butter.

You can substitute tarragon or thyme for parsley and chives for a different flavor.

Grilled veggies like asparagus, zucchini, or corn can be served alongside the lobster for a complete meal.

Leftover lobster can be stored in the fridge for up to 2 days.

Reheat lobster in the oven at 275°F for about 10 minutes to avoid toughening the meat.
